Ginger Scallion Sweet Potato Pancakes

Low-glycemic, rich in Vitamin A, C and manganese, equally as good cold after a gym workout

  • 30 min cook time
  • Makes 4 (4-inch) pancakes

Ingredients

2 medium sweet potatoes
2 eggs
2 medium scallions, sliced thin
1 tbs (6g) minced ginger
3 tbs (6g) fresh basil (minced)
1/3 cup (42g) potato starch
1 tsp salt
1 tsp pepper
2 tsp bacon fat for frying

Wash, perforate and peel the sweet potato. Microwave until soft in the center. Set aside to cool. Combine remaining ingredients in a large bowl. Add mashed sweet potato and mix thoroughly. Warm skillet over medium heat. Drop 1/4 cup ladle amount into pan and flip after 3 minutes. Bottom should be lightly browned. Continue to cook on other side. Serve with a side of bacon and dollop of creme fraiche.
