Balsamic Glazed Salmon
referenced document uses Brussel Sprouts as a base. I like adding it to a warm spinach salad with red onions, feta, mandarin oranges and toasted pecans (with the same sauce as salmon)

Ingredients
1/4 c. extra-virgin olive
kosher salt
Freshly ground black pepper
1/2 c. balsamic vinegar
1/4 c. dry white wine
2 tbsp. brown sugar
1 tbsp. fresh rosemary, stripped and chopped
2 cloves garlic, minced
Juice of 1/2 lemon
4 4-oz. salmon filets
Directions
Preheat oven to 400 degrees. In a small saucepan over medium heat, combine balsamic, wine, brown sugar, lemon, rosemary, and garlic. Bring to a boil, then simmer until thick and shiny, 10-12 minutes. Place salmon fillets skin-side down, brush with olive oil season with salt and pepper, and spoon with glaze. Bake until cooked through, 12-15 minutes. Add atop salad, brussel sprouts, or rice.
